Welcome to my very first cooking video! This is something I have talked about doing for such a long time. My passion for cooking comes from watching my parents own and operate an Italian restaurant for over 40 years. My life was centered around cooking and entertaining, without even knowing that was a thing, it's just what we did. Our Sunday meals were set up in the living room with at least room for 12 or more, there were nine of us and always extended family and friends around our table.
When my husband and I had our two sons, dinner time was never missed. It was a time for us to come together and share our day and stay connected. That is what cooking means to me, it brings the ones you love together to share a meal made with love.
This is a great dish served al fresco with your favorite sides and a nice bottle of wine.

Recipe - Roasted Chicken ( Cast Iron Skillet )
3 1/2 - 4 Pound Chicken
4 cloves of garlic chopped
1/4 cup herbs de Provence
1/4 cup olive oil
1 tbsp Kosher Salt
tsp. Black Pepper
Sliced Lemon - 1 whole lemon
Instructions
Preheat oven to 475.
While mixing your rub, heat your cast iron skillet on cooktop until hot.
Mix Garlic, herbs de Provence, olive oil, Kosher Salt, Black Pepper. - Rub mixture all over chicken and inside the cavity. Insert lemon sliced lemons
After cast iron is hot, place whole chicken on the skillet 3-4 minutes, then place in oven.
Roast chicken for 25-30 minutes until golden brown.
Then reduce heat to 350 degrees and roast until your meat thermometer reaches 165 degrees, 25-30 minutes longer. Let chicken rest for 10 minutes before serving.
Serve with your favorite sides and enjoy!
