I love a quick and easy tomato sauce that you can use for so many dishes like Eggplant Parmesan, Chicken Parmesan, fish or just if you want a cozy bowl of pasta. There is something about the aroma of sauté onions, garlic and some tomatoes that puts me right back in my parents kitchen. When I’m missing my family or the days where my cousins and Aunts and Uncles all would gather for one occasion or another, I just put a pot on my stove and chop some onions, garlic a little olive oil and tomatoes and I’m right back there. My childhood was surrounded by so many great cooks and the food was always the center of every occasion, that was and is the Italian way, and with my Hungarian mother, who added the gas to the flame, taught me everything I know.
INGREDIENTS
1/4 cup of olive oil
1 medium onion finely chopped
4 chopped garlic cloves
Red pepper flakes (optional)
2 tablespoons tomato paste
1 28 oz crushed tomatoes
PREPARATION
Heat oil in a medium saucepan over medium-high heat. Add onions and cook, stirring occasionally until beginning to brown. Add chopped garlic and red pepper flakes stirring until fragrant about 1 minute. Add tomato paste and cook stirring until it begins to darken and add your crushed tomatoes, season with salt and pepper. Bring to a boil, reduce heat and simmer partially covered for about 15-20 minutes or until thickened.
